Masukkan campuran tersebut ke dalam wadah fermentasi ( baskom berukuran 34 x 25 x 5 cm ). Wadah ditutup dengan kain saring dan diletakkan ditempat yang bersih dan aman. Dilakukan pemeraman selama 8-14 hari hingga lapisan mencapai ketebalan kurang lebih 1.5 cm.

5. Pemanenan
Setelah pemeraman selesai dengan terbentuk lapisan nata,lapisan nata diangkat secara hati-hati dengan menggunakan garpu atau penjepit yang bersih supaya cairan dibawah lapisan tidak tercemar. Cairan dibawah nata dapat digunakan sebagai cairan bibit pada pengolahan berikutnya.Buang selaput yang menempel pada bagian bawah nata, dicuci lalu dipotong dalam bentuk kubus dan dicuci.

BAGI para penikmat makanan, Jamur Tiram dikenal sebagai bahan baku olahan aneka masakan lezat. Mulai dari burger, bakso, soto, saus, lumpia, krispi hingga ongseng-ongseng. Namun tahukah Anda, bahan baku masakan olahan dari Jamur Tiram tersebut bibitnya dipasok dari Kota Batu?

Desa Pendem Kecamatan Junrejo, merupakan penghasil utama bibit Jamur Tiram di Kota Batu yang banyak dipasok ke beberapa daerah lain di Jatim bahkan Bali. Bahkan, pembibitan Jamur Tiram sudah menjadi pilihan utama mata pencaharian warga setempat. Mereka tidak saja membudidayakan, tetapi juga mengolah dan membuat bibit Jamur Tiram guna dipasok ke beberapa daerah.

Pembibit Jamur Tiram, Takari Bambang Israwan, ST, kepada Malang Post menuturkan hampir semua rumah tangga di RW 03 desa tersebut membentuk home industry pembuatan bibit unggul Jamur Tiram.
“Bibit Jamur Tiram dari Pendem ini mampu memberikan daun dan batang jamur lebih besar dan merekah serta lebih lunak dengan masa panen 7 hingga 8 kali dalam setahun. Bibit jamur kami buat dalam bentuk logmedia atau baglog dalam kantong-kantong plastik berbentuk botol,”imbuh alumni Fakultas Teknik Universitas Merdeka Malang tahun 1993 itu.

Bambang bersama rekannya Agus Mulyadi memulai usaha dan merintis pembibitan Jamur Tiram di Pendem pada bulan September 2007, usai mendapatkan pelatihan singkat tentang pertanian Jamur Tiram selama dua pekan oleh PT Sampoerna di Pandaan. ‘’Dengan modal awal Rp 1,2 juta, kami berdua tahun 2007 mulai membuka usaha pembibitan Jamur Tiram. Hanya sebulan saja sejak awal mulai usaha, modal kembali,”tukas Bambang.

Berharga jual Rp 2.500 per logmedia atau kantong plastik, dalam sebulan mereka mampu menjual 7.000 hingga 9.000 bibit jamur tiram ke pasaran di dalam dan luar Malang. Per bibit Jamur Tiram dalam sekali panen bisa memberikan hasil 8,5 ons jamur dengan masa panen maksimal delapan kali dalam setahun untuk satu kantong bibit. Atau lebih banyak dibandingkan bibit dari daerah lainnya yang rata-rata hanya 5 kali. ‘’Kami menerima banyak pesanan dari luar kota. Dari usaha ini, kami bisa mendapat keuntungan bersih Rp 6 juta hingga Rp 7 juta. Lumayanlah,’’ tutupnya.
